Production Secrets of High Polyphenol Olive Oil

When producing Q Farm Olive Oil, 3 principles are never compromised for high level of flavor and health.

100% of the olives are harvested from Memecik olive trees of the Heraclean lineage, of which only 479 remain. This ensures the same quality and the same high polyphenol content in every bottle.

The harvest is not done at an early or moderate time, but at the "right time", i.e. when the best quality result will be obtained, taking into account the climate and the condition of the grove, and without the olives touching the ground.

On the same day, olive oil is produced by cold pressing, using modern technology but in line with thousands of years of tradition. After the pressing, it is stored in chrome tanks at 16°C, away from air and light.

Whereas in other regions a liter of olive oil can be produced from three or four kilos of olives, 21 to 50 kilos of olives are used for one liter of Q Farm Olive Oil with high polyphenol content.

The wild olive that grows spontaneously in nature is called Delice and is known to be the ancestor of the olive. Delice trees are not grafted. They bear fruit in their own natural process. These olives are not suitable for use as food, but a very high quality, pure olive oil with a very high polyphenol content is obtained.

Delice olives have small fruits and low productivity. It is harvested by manpower without the use of agricultural tools. Harvesting is challenging and laborious. The productivity rate varies according to the season, region and variety; between 18 kg and 35 kg, a maximum of 1 kg of oil can be produced from Delice. However, polyphenol rates are just as high.
