We harvest our olives by hand between September 1–15 during the early harvest period, using special bone rakes and baskets. Our olives never come into contact with plastic at any stage. They are cold-pressed within 8 to 24 hours at the latest. The oils are stored in stainless steel tanks under ideal cold-air conditions.
During early harvest, olives are small and low in oil content but very high in biophenols. To produce 1 liter of high biophenol olive oil, between 15 and 65 kilograms of olives are used. This low yield demonstrates the level of care required in our work.
After production, all our products are analyzed. They are categorized according to their biophenol values based on the amount of olives used. As the quantity of olives increases, the biophenol value rises.
Authentic high biophenol olive oil can only be obtained during the early harvest period, from olives picked at the right time and processed and stored using the correct methods.
